Recipe: Yummy Raspberry and chocolate banana muffins

  1. You need 1 of + 3/4 cup Brown rice flour (sifted).
  2. It's 3/4 cup of quinoa flour.

  5. It's 1/4 cup of Rice malt syrup or honey.
  6. You need 2 Teaspoons of Baking powder.

  10. You need 3 of ripe Bananas.

  14. It's 1 cup of fresh Raspberries.

In a large bowl, mash bananas and raspberries with a fork. In the same bowl, add baking soda, coconut sugar, Himalayan salt, vanilla extract and coconut oil, and stir until all the ingredients are combined. Once blended, add the egg, vanilla, and bananas; mix together well. Add the flour, oats, baking powder, baking soda, cinnamon and salt to the bowl and incorporate into the wet ingredients.

  1. Preheat oven to 180° celcius. Lone a 12 tin muffin tray with patty pans..
  2. In a medium bowl add, flour, cacao, sugar, syrup, baking powder, salt, cinnamon and melted coconut oil..
  3. In a separate bowl, add smashed bananas, egg one at a time, milk and vanilla. Mix well..
  4. Slowly add the wet ingredients into the dry ingredients, mix well..
  5. Gently fold in the raspberries, fill patty pans evenly with the batter..
  6. Bake for 12-15 minutes. Test with a skewer, if it comes out clean, they are cooked..
  7. Cool on a wire rack..
